Recipe made with Chaï  – a black tea with Indian spices (ginger, cloves, red berries and cardamom).

 Mocktail APOLLO by Remy Savage Mixologist

Ingredients (for 4 mocktails)

■ CHAI Iced Tea 36 grams or 6 sachets

■ Water 400 ml

■ Mango yoghurt 200 g

■ White sugar 30 g

Preparation

- Cold brew the CHAI tea for 1 hour or hot for 5 minutes, then leave to chill in the fridge.

- Combine 400 ml brewed CHAI tea, white sugar and yoghurt. Blend together for 5 minutes then strain through a coffee filter until the mixture is smooth. Pour over ice.
