Lovely Chai Herbal Infusion Strawberry Sorbet, an easy recipe to make and enjoy at home
Ingredients
■ 1.2 kg strawberries (1 kg for the sorbet + 200 g for the dried strawberries)
■ 165 g sugar
■ 250 g water
■ 1 lemon
■ 12 g Lovely Chaï herbal infusion
Dried strawberries
- Preheat your oven to 176/194°F.
- Boil the water and sugar, add the Lovely Chaï herbal tea and leave to infuse for 4-6 minutes, then allow to cool to roughly 158°F.
- Cut the strawberries into thin slices approximately 2 mm thick and leave to macerate for 30 minutes in a small quantity of the cooled infusion.
- Strain and spread the slices out over baking paper on a baking tray.
- Place in the oven for 60 minutes. Keep a close eye on the strawberries during cooking. They should turn dark red but not blacken.
Strawberry sorbet
- Cut the strawberries into small pieces and heat in a pan.
- Filter the leftover infusion and pour over the strawberries, mix together, then add the juice of one lemon.
- Place in an ice-cream maker and follow the manufacturer’s instructions.
- To serve, decorate the sorbet with a few slices of dried strawberry.
