OSMANTHE D’OR MISO ice cream by Céline Pham, Chef
Recipe made with Osmanthe d’or – a low-oxidation oolong tea, produced in Fujian province, named after the slightly golden color of its leaves and its scent of osmanthus flowers.

Ingredients (for 6 persons)
Preparation: 1 hour
■ OSMANTHE D’OR Chinese Tea 25 grams
■ Whole milk 500 ml
■ 35% cream 500 ml
■ Egg yolks 7
■ Miso 25 g
■ Sugar 125 g
Preparation
- Heat the milk and cream to a gentle boil, then whisk the egg yolks with the sugar and add
the miso.
- Brew the OSMANTHE D’OR Chinese Tea for 3 minutes in the milk and cream and remove the tea.
- Pour over the egg mixture, mix quickly and strain through a fine sieve.
- Leave to cool and place in an ice-cream maker according to the instructions. Enjoy on its own or with a chocolate cake.
