How oolong tea is manufactured?
Stages involved in producing oolong tea.
1- WITHERING, often completed outside on bamboo trays or tiles.
2- OXIDATING-TUMBLING the leaves regularly over several hours to trigger slow oxidation until the desired level is obtained.
3- ROLLING by hand or machine to give the leaves a ball or spiral shape.
4- DRYING to ensure the leaves have a low level of humidity. This can be done either in ovens or rotating drums.
