The main product used in Carcadet is the red and fleshy calyx of the hibiscus sabdariffa flower. Also known as roselle, Florida cranberry, red sorrel, or Jamaica sorrel, this plant is, like cotton, part of the malvaceae family. Grown below subtropical latitudes and found throughout North Africa, dried hibiscus flowers are traditionally served in an infusion that is popular for its tangy flavours and natural aromas of red fruit.
In our recipes, it is paired with rose hip and dried apple to add a light and gentle sweetness.
